Its approach is determined by two criteria. First, hold fast to the love for, and bond with, this local area, which is the traditional wellspring for its cuisine; second, exhibit originality but one which complements the surrounding human and natural environment.
The goal is to create a gastronomic benchmark for Siena and its environs, with primary emphasis on serving the Sienese themselves. The offerings are designed to delight all those, tourists and not, who are looking for a truly authentic experience.
The MENÙ is organised into antipasti, first courses, second courses, and desserts, without any clear prioritising, but it is well known that Cornelio loves his fish, likes to take advantage of what has just appeared in the market, and prizes whatever can conjure up age-old dishes and flavours. So depending on what delicacies he finds in the market, those are the themes he works with.
Casato Enoristorante does however offer some fixed principles to ensure that its guests will always enjoy a rich choice.
The menu changes with the alternation of the seasons;
Besides what “the chef recommends” every day, each week will reveal new dishes from both land and sea;
Consistent with Cornelio’s rich professional experience, the menu will feature some international gastronomic gems;
Food and wine are on the same level, each receiving the same degree of dignity and attention.
The OLIVE OIL LIST showcases the exceptional nature of extravirgin olive oils, of various kinds, both varietal and blends. Such oils are an essential ingredient in the preparation of the restaurant’s dishes.
The WINE LIST provides a wide-ranging portfolio of Italian wines that, alongside the food, constitute the quintessential raison d’être of the Enoristorante. The sommelier will recommend the ideal food pairing for each wine, and the kitchen prepares each dish with an eye to which wines will complement it.
Equal attention is paid to surroundings and hospitality.
